Hi and welcome to Burrita Bytes! My name is Karen and I live with my family in coastal Rhode Island. I grew up in the metropolitan New York area and moved to New England after I met my husband in the wilds of Manhattan almost 20 years ago. We have three children – from elementary school to high school – and one insane, but extremely lovable ‘purebred’ LabraTerrier rescue named Maddie. I also have a grown son, daughter-in-law, and two grandchildren – what??
Family meals were very important in my home as a child. I want to make sure that my children have the same foundation and memories that I was so fortunate to have experienced. It has been a mission for me to make sure that my children try many different types of food growing up so they are comfortable eating wherever our travels take us. I take great care in choosing ‘real’ quality ingredients and providing thoughtful, healthy meals no matter what our crazy schedule looks like – and believe me, it is crazy!
As for the name ‘Burrita Bytes’, I will explain. My husband almost never calls me by my given name. Burrita is a derivation of my last name before we got married and, besides ‘Mom’, it’s what I go by in our house most of the time. Bytes is more obvious – I’m hoping to provide you with the tools and support to create your own delicious ‘bites’ for your friends and loved ones through this blog. I am not a trained chef, but, rather, a cookbook-obsessed, food-blog-reading, youtube-watching, pinterest-searching, self-taught cook. I decided to start this blog because I am cooking and creating meals in the kitchen almost every day anyway, so why not share? I would be thrilled if you find just one recipe from this site that makes you a rock star in your kitchen.
So, to quote one of the young guests at my dinner table before we begin each and every meal, “Let’s Eat!!!”
